Frutto di una rigorosa selezione di uve Chardonnay e Pinot Nero provenienti dai migliori cru collinari della Franciacorta, il Pas Operé di Bellavista è un'elegante espressione di uno stile puro e sofisticato, prodotto solo nelle annate eccellenti. Lunga fermentazione in acciaio e parziale affinamento in piccoli fusti di rovere, seguito da una lunghissima sosta sui lieviti di almeno 72 mesi, conferiscono al vino una struttura complessa e una straordinaria raffinatezza. Alla vista si presenta con un colore dorato brillante e un perlage finissimo. Al naso emergono sentori di agrumi canditi, frutta secca, miele e note tostate. Al palato è secco, cremoso e avvolgente, con un equilibrio impeccabile e una chiusura lunga e sapida. Perfetto in abbinamento con crudi di mare, crostacei, foie gras o piatti a base di tartufo bianco.
